Lemon butter crackers is a traditional Bengali cookie recipe and comes in two types: savory and sweet. In addition, these cookies differ in shape, as well as shades of taste. For example, poppy seeds are added to square crackers, and sesame seeds are added to oblong crackers. Usually butter crackers are served with an afternoon snack with tropical fruits.

Recipe Ingredients

Wheat Flour 230 g
Butter 70 g
Yogurt 2 tbsp
Lemon Juice 60 ml
Lemon Zest 0.5 tsp
Water 1 tbsp
Salt 1.25 tsp
Soda 1 pinch

Cooking Recipe

For lemon butter crackers recipe, add salt, baking soda, lemon zest to the sifted flour and mix. Grind flour with softened butter into crumbs.

In a separate bowl, mix the yogurt with ice water and lemon juice and slowly fold into the flour. Knead elastic dough, knead for 2-3 minutes.

Divide the finished dough into 5 parts, cover 4 parts with a damp towel. Sprinkle the remaining piece with flour and roll into a cake with a diameter of 18 cm. Cut the cake into strips of 2.5 cm, and then cut obliquely, you should get diamonds 2.5 cm by 5 cm. Pierce each diamond with a fork.

Pour about 5 cm vegetable oil into a preheated pan. Put the prepared rhombuses into the preheated oil and fry on both sides until light golden brown. Remove the fried butter crackers with a slotted spoon and transfer to a plate with a napkin. Do the same with the rest of the dough.
