For mustard potatoes, combine red wine vinegar, olive oil, mustard, finely chopped onion and parsley in a deep bowl.
Peel the potatoes, boil in salted water, and then cut into slices. Potatoes drizzle with white wine vinegar, pour over with mustard sauce and stir gently. Serve the salad warm.
