Vegetable caviar – a recipe for russian cuisine, light lean caviar, this vegetable caviar is best served chilled.

Cooking Recipe
For the vegetable caviar recipe, bake sweet peppers and zucchini in the oven, cool and chop finely. Cut the remaining vegetables into cubes and fry in vegetable oil.
Add tomato paste, zucchini, bell peppers to vegetables, mix and simmer for 15 minutes. Grind the garlic with salt and season with vegetable caviar.
Also in vegetable caviar add vinegar, pepper and, if there is little salt, salt. Mix everything well and refrigerate. When serving, sprinkle vegetable caviar with chopped herbs.
