The cutlets are very easy to cook; the most important thing is to wait until absolutely all the water evaporates when cooking the onions. Once the water has evaporated, continue cooking over medium-low heat for another 5 minutes to dry out the leeks further.

The recipe for leek cutlets is very simple. Cut the leek lengthwise and then into half rings. Place in a deep frying pan and add water just enough to cover the onion. Cook over medium heat until the water has completely evaporated, this may take 1.5-2 hours.

Then mix the leeks with breadcrumbs, egg, pepper and salt. Form 8 cutlets from the resulting mass.

Heat vegetable oil in a frying pan, place the cutlets and fry on both sides until golden brown. Serve cutlets hot with yogurt or tahani.
