Leek cutlets – a Jewish recipe, vegetarian leek cutlets are great for Hanukkah. The cutlets are very easy to cook; the most important thing is to wait until absolutely all the water evaporates when cooking the onions. Once the water has evaporated, continue cooking over medium-low heat for another 5 minutes to dry out the leeks further.
