Cooking Recipe

For the recipe boxty on a baking sheet 600 g potatoes, peeled, boiled and mashed.

Peel the rest of the potatoes, grate on a coarse grater, transfer to cheesecloth and squeeze, do not pour the juice from the potatoes, you will still need it.

After 15-20 minutes, when the potato juice settles, drain the liquid, and combine the precipitated starch with mashed potatoes and grated potatoes.

Salt and pepper the potato mixture and, gradually adding the sifted flour, knead a stiff dough. Pour melted butter into the dough and knead again.

From the resulting dough, form buns in the form of plump pies and put on a greased baking sheet. On top of boxty make criss-cross cuts and place in a preheated 180°C (355°F) oven for 25 -30 minutes. Such boxes are served instead of bread.
