Wheat Flour 2.5 cups
Quince 1-2 pcs
Butter 200 g
Sugar 1.5 cups
Eggs 2 pcs
Salt 1 pinch

Cooking Recipe

To cook Azerbaijani cuisine recipe quince pie, grind flour with butter, half a glass of sugar, a pinch of salt and a baking powder. It should be crumbly crumb.

In a separate bowl, mix mashed cottage cheese with eggs, remaining sugar and vanilla sugar. Mix everything until smooth.

Wash the quinces, cut into four parts and remove the seed core. Twist quince with peel in a meat grinder or grate.

Cover the baking dish with parchment or grease with butter, put half of the crumbly dough on the bottom and sides. Usually I use a shape of 20 cm in diameter, but this time I wanted a tall cake, and I used a shape of 14 cm.

Put the curd filling on the dough, then spread the quince evenly.

Cover with crumbs of the remaining dough. Place the cake in an oven preheated to 180°C (355°F) and bake for 35-40 minutes. Serve quince pie immediately after cooking, while it is warm, curd quince pie can be sprinkled on top of sugar powdery.
