Baked potato with mushrooms - a recipe for Ukrainian cuisine, champignons are used for this recipe, but you can use any mushrooms, you can even dried them. Dried mushrooms must be soaked in water in advance so that they swell. 5 minutes before the end of cooking, potatoes baked with mushrooms can be sprinkled with grated cheese.

Recipe Ingredients

Potatoes 1 kg
Champignons 200-300 g
Onion 1 pcs
Garlic 1-2 clove
Butter 3 tbsp
Vegetable Oil 2 tbsp
Eggs 4 pcs
Milk 150 ml

Cooking Recipe

For the potatoes baked with mushrooms recipe, peel the potatoes, wash them and cut into layers about 2-3 mm thick. Peel and finely chop the onion and garlic, wash the mushrooms and cut into not very large pieces.

Pour 1 tbsp into a heated pan vegetable oil and 1 tbsp. butter, add garlic and, when the aroma of garlic goes, add onion. Saute the onion until soft and add the mushrooms to the pan. Mix everything well, salt and pepper.

It is not necessary to stew mushrooms for a long time, literally until half cooked, then they will be cooked in the oven with potatoes. Finely chop the greens, pour into a pan with mushrooms, mix and turn off the heat.

Lubricate the baking dish with vegetable oil, put a layer of potatoes, salt, pepper, put a layer of mushrooms on top, and so on.

In a separate bowl, beat eggs with milk, salt and pepper. Pour the egg mixture over the potatoes and mushrooms, top with the butter chunks, cover with foil or a lid, and place in a preheated 180°C (355°F) oven.

Cook potatoes with mushrooms for 1 hour, then remove foil, increase temperature to 200°C (390°F) and let potatoes sear lightly. Cook potatoes with mushrooms for another 10 minutes, and then remove the potatoes from the oven, arrange on plates and serve.
