Potato boiled in dashi broth (Nikkorogashi) A Japanese recipe, nikkorogashi is made from new potatoes.

Recipe Ingredients

Potatoes 1 kg
Sesame Oil 1 tbsp
Soy Sauce 3 tbsp
Dashi Broth 250 ml
Onion 1 pcs

Cooking Recipe

For the nikkorogashi recipe, peel the onion and cut into thin rings. Heat the oil in a deep frying pan, put the chopped onion and fry for 30 seconds, then add the washed, unpeeled potatoes and fry, stirring occasionally, until all the potatoes are covered with a layer of oil.

Then pour in dashi broth, soy sauce, cover and cook for 15 minutes. Turn potatoes every 5 minutes. Remove the lid and cook potatoes for another 5 minutes to evaporate the broth.

When there is little liquid in the pan, remove from heat and let stand covered for 5 minutes. Transfer the boiled potatoes and onions to a deep bowl, pour over the sauce and serve immediately.
