Pickled eggplant - Jamie Oliver's recipe, this way you can pickle any vegetables, such as zucchini, carrots and others. Pickled eggplants are good as an appetizer or as an addition to the main course. Cool the eggplant in the refrigerator before serving - this way they will be tastier.

Recipe Ingredients

Eggplants 1 kg
Water 1 l
Salt 2 tbsp
For Marinade
Hot Pepper 2 pcs
Garlic 3-4 cloves
Vegetable Oil 500 ml

Cooking Recipe

To cook the recipe of Jamie Oliver pickled eggplant in a deep saucepan, combine water, vinegar, salt and put on high heat until boiling. Cut the eggplant into bite-sized pieces. Dip the eggplant in a pot of boiling brine and cook for 3-4 minutes.

Cut hot pepper into circles and combine with chopped, peeled, garlic and dry oregano.

Mix everything and combine with vegetable oil. In order for the eggplant marinade to better highlight its aroma, it must be lightly kneaded with your hands.

Remove the eggplants from the brine with a slotted spoon and immediately, while they are hot, transfer them to the marinade and mix.
