Piperade is a Spanish recipe, a very simple and delicious omelet with vegetables and smoked ham. This omelet is perfect for breakfast or as a snack.

Recipe Ingredients

Eggs 9 pcs
Ham 6 slices
Tomatoes 6 pcs
Bell Pepper 3 pcs
Onion 2 pcs
Garlic 2 cloves
Vegetable Oil 4-5 tbsp

Cooking Recipe

For the piperade recipe, fry the ham in hot oil and transfer to a plate lined with a kitchen towel. In the pan where the ham was fried, pour finely chopped onion and, stirring occasionally, fry it for 5 minutes. Scald the tomatoes, peel and cut into rings, cut the pepper into strips.

Add tomatoes, peppers, crushed garlic to the pan to the onion, mix and simmer over low heat until the liquid has evaporated. In a separate bowl, lightly beat the eggs, pour them into the pan with vegetables, cover and fry, shaking the pan slightly.

At the end of frying, piperade omelette pepper, salt, garnish with slices of fried ham and serve.
