Beans in a pot - a recipe for Mexican cuisine, potted beans are one of the main ingredients. Usually the beans are stewed or boiled in clay pots, but a pressure cooker is used to shorten the time. These beans are served with sauce or various dishes are prepared on its basis. Mostly red or black beans are used.

Cooking Recipe

To cook the recipe for Mexican cuisine beans in a pot, rinse the beans under cold running water. Transfer to a deep saucepan, pour cold water so that it covers the beans by 5 cm. Set aside the poured beans to swell for 3 hours. After the time has elapsed, drain the water from the beans, transfer the beans to a saucepan with a heavy bottom or to a roasting pan, add water, onion, lard and bring to a boil. Cover the pan with the beans, reduce the heat and cook for 1.5-2 hours until the beans are soft.

When the beans become soft, add celery, pepper, salt and continue to cook for another 20 minutes. At the end of cooking, remove the onion, celery and pepper. Ready beans can be served immediately or transferred to an airtight container and stored in the refrigerator. Ready beans in a pot can be stored for 2-3 days.
