Candied citrus peels – Greek cuisine recipe, such sweets can be cooked from the peel of lemon, orange or grapefruit and served with tea. If you only have lemons or only oranges, it is perfectly okay to cook separately, but a more interesting flavor is obtained when using the rind of several citrus fruits.

Recipe Ingredients

Orange 2 pcs
Lemon 2 pcs
Grapefruit 2 pcs
Sugar 900 g
Water 300 ml
Citric Acid 1 tsp
Lemon Juice 1.5 tbsp
Honey 3 tsp

Cooking Recipe

To cook a Greek cuisine recipe candied citrus peels wash well with a brush with warm water. Using a fine grater, remove a small layer from the zest of a whole orange, grapefruit and lemon.

After that, cut the citrus fruits in half, remove the slices, and cut the peel into petals. One fruit should have 6 identical petals.

The white part on the inside of the skin must be cut off so that approximately 2 mm remains. The peel should not be too thick, otherwise it will not be possible to fold normally and it will subsequently unfold.

The thin cut skin must be rolled up and secured with a toothpick. Pour the rolled peel with boiling water and set aside for a day to soften and remove the remnants of bitterness.

The next day, boil a thick syrup from water and sugar, and while it is still hot, put the peel into it, after removing the toothpicks. Leave everything as such for another day.

On the third day of cooking, boil the peel in syrup with citric acid, lemon juice and honey. Simmer over very low heat until the citrus peel becomes transparent and sinks to the bottom of the syrup. For a more interesting flavor, add a cinnamon stick. Transfer the finished candied citrus fruits to a jar, cover and store in a cool dry place.
