Beshkito cookies is a Moroccan recipe that uses vegetable oil as a fat. In order for the beshkito not to become stale for a long time, it is better to store them in a plastic bag.

For beshkito, you need to beat 4 eggs with sugar into a fluffy foam, and, without ceasing to beat, add vegetable oil. After the mixture becomes homogeneous, add starch, lemon zest and yeast.
Mix everything well and gradually add flour. Knead the dough, cover with a damp cloth and let rest for 15 minutes.
On a floured surface, roll out the dough to a thickness of 4 cm. Cut out round beshkito from the dough, brush with lightly beaten egg yolk and bake at 180°C (355°F) 20 minutes.
