Imam bayildi – a traditional Turkish food recipe, eggplant stuffed with vegetables, herbs and walnuts. For a more colorful look, it is advisable to take a red pepper.

Eggplants 2 pcs
Bell Pepper 2 pcs
Onion 2 pcs
Tomatoes 4 pcs
Walnut 6 tbsp
Garlic 5-6 cloves
Olive Oil 8 tbsp
Cilantro 1 bunch
Parsley 1 bunch
Cumin 2 tsp

Cooking Recipe

To cook a Turkish cuisine recipe imam bayaldi, wash the eggplants, cut them in half lengthwise, cut out some of the pulp, or make deep cuts along the length without cutting the eggplant. After that, salt the eggplants and set aside for 1 hour. After the time has elapsed, squeeze the eggplants and fry on the inside side in oil.

Fry finely chopped onion and grated garlic in a separate frying pan.

Pour finely chopped pepper to the onion and garlic.

When the pepper is lightly fried, add finely chopped tomatoes and chopped nuts, mix well and simmer for 7-10 minutes.

Then add chopped greens, cumin, salt and pepper, heat for another 2-3 minutes and remove from heat.
