Fried tofu - tofu is fried in a large amount of vegetable oil, over high heat and after being soft and smooth, it becomes firm and spongy. Served with minced pork tofu, seasoned with spicy soy sauce, garlic and ginger. Tofu is a very tender and watery cheese, which makes it a bit difficult to cook. Half an hour before cooking, tofu cheese is placed under a press, cutting board to remove excess liquid.

Vegetable Oil 200 ml
Pork 150 g
Garlic 2-3 cloves
Ginger 1-2 cm

Cooking Recipe

To cook recipe Chinese fried tofu, place a paper towel on a cutting board, top with tofu cheese and cover with another cutting board. It is enough to keep the cheese under oppression for 30 minutes.

Cut the tofu into 4 cm square pieces, strip each piece diagonally into 2 triangular pieces. After each triangular piece, cut horizontally to make pieces 6 cm thick.

Heat vegetable oil in a frying pan over high heat, then add tofu and fry until golden brown. There should be enough oil to completely cover the cheese.

Transfer the fried tofu to a sieve to drain excess oil, and leave 2 tbsp in the pan. oils.

Mince the pork through a meat grinder, finely chop the ginger and garlic. In a frying pan, heat the remaining oil, put the minced meat in it and fry for 1 minute over high heat, stirring. Then add garlic, ginger and spicy soy paste. Fry, stirring, for another 1-2 minutes.

Pour the broth into the minced meat, put the fried tofu, add salt and sugar. Mix everything, bring to a boil, cover and simmer over low heat for 3 minutes. For density, dilute the starch in 2 tbsp. water and pour into minced meat with tofu, and then simmer for another 1 minute. Ready fried tofu put on a dish, garnish with finely chopped green onions and pour over hot sesame oil.
