Spicy soybean paste - Doubanjiang, or simply Douban, a spicy, salted paste made from fermented beans, soybeans, salt, rice and various spices. Doubanjiang exists in simple and spicy versions, with the latter containing red chili and called la doubanjiang (豆瓣酱 豆瓣酱; pinyin: là dòubànjiàng; and means “hot” or “spicy”). The pasta is used, in particular, in the Sichuan province, and in fact, the inhabitants of the province usually call it "the soul of Sichuan cuisine." A particularly famous variety is called Pixian Douban (豆瓣 豆瓣), named after the city of Pixian, Sichuan. This pasta is sometimes fried with butter and eaten with rice or noodles as a quick dish, and is also often used as the main flavor for fried tofu dishes and cold tofu salads. Pasta is also often mixed with instant noodles.
