Profiteroles - a recipe for baking, profiteroles are universal pastries, with different fillings you can get a completely different dish. It is very convenient, especially for a buffet. But profiteroles may not work if the dough is overexposed to heat, as the flour will begin to dissolve in the oil and the dough may become too thin. Accordingly, the dough will not hold its shape, and it will simply turn into a cake that will spread.

Water 90 ml
Milk 90 ml

Cooking Recipe

To cook the recipe profiteroles, pour water and milk into a saucepan, you can add water alone, add salt, softened butter and put on medium heat. When the butter has completely melted and combined with water, bring the liquid to a boil, and, stirring with a wooden spoon, quickly pour in all the sifted flour.

Quickly mix the dough with a wooden spoon, during this time the dough warms up and brews. When all products are mixed into a homogeneous mass, remove from heat. Do not keep the dough on fire for a long time, oil will begin to stand out and the dough will become liquid. If it so happened that the dough was overexposed on fire, you can add a small amount of flour, but this will not be quite custard dough and may affect the quality of baking.

Next, the dough needs to be cooled, and only then add one egg at a time. Add an egg to the cooled dough and mix with a spatula or a wooden spoon until smooth, then the next egg, and again until smooth, etc.

Transfer the finished custard dough to a pastry bag, you can take a curly nozzle. Line a baking sheet with parchment paper and place profiteroles on it. Don't plant them too close, as they will swell and expand as they bake.

Preheat the oven to 180-200°С (355-390°F), it all depends on the size of the profiteroles. Place a baking sheet with profiteroles in a preheated oven and bake for 15-20 minutes. The time also depends on the size of the profiteroles. Ready profiteroles put on a wire rack and let cool, and then you can fill with any filling. The filling for profiteroles can be sweet, and maybe from fish, meat or vegetables.
