Bilberries lemon pie - a recipe from Italian cuisine, a simple and at the same time bright pie with bilberries and lemon glaze. This recipe uses not only lemon juice, but also its zest. This cake can be prepared in advance, but not covered with icing. It can be stored in the refrigerator and covered with glaze half an hour before serving.

Sugar 210 g
Wheat Flour 290 g
Eggs 4 pcs
Lemon Zest 1 tsp
Lemon Juice 40 ml
Bilberries 80 g
Salt 1 pinch

Lemon Juice 30 ml

Cooking Recipe

The recipe for bilberries lemon pie is very simple. Beat softened butter with sugar until creamy. Add eggs one at a time and continue beating. Next, gradually add flour and baking powder. Add lemon zest, lemon juice and berries to the dough, mix with a spatula.

Grease a 26x11cm baking dish with butter and sprinkle with cornmeal. Place the dough into the prepared pan and smooth it out. Preheat the oven to 180°C (355°F), place the cake in the oven and bake for 70 minutes. After the time has passed, without removing the cake from the mold, let it cool slightly until warm, and then remove it and place it on a wire rack to cool completely.

While the cake is cooling, prepare the glaze. In a bowl, mix powdered sugar and lemon juice. The glaze should be thick, viscous and at the same time fluid. If the glaze is too hard, add lemon juice; otherwise, add powdered sugar.

Cover the cooled cake with glaze and decorate. You can decorate with grated zest, blueberries, mint leaves. If pie is prepared in advance, store in the refrigerator and cover with glaze half an hour before serving.
