The recipe for Russian cuisine smokva is very simple. Wash, dry, cut the apples into slices, remove the core, put in a deep saucepan, cover with a lid and put on a very slow fire.

Stir the apples from time to time. When the apples are soft, rub them through a sieve.

Ready applesauce weigh and measure the same amount of sugar. Put applesauce on a very slow fire and, stirring occasionally, cook until the puree begins to lag behind the walls of the dish.

Pour sugar into the puree, mix and continue to cook, stirring. Cook until it becomes one whole layer.

Put the resulting mass on a baking sheet or tray lined with paper, the height of the mass is at least 2.5 cm, and set aside to solidify.

When the smokva layer hardens, cut it into squares, rhombuses or rectangles, roll in powdered sugar and put in jars. Cover the jars with smokva with paper, tie with twine and in this form apple marmalade can be stored all winter.
