Zucchini Soup – Bulgarian cuisine recipe. A light summer soup that can be served not only hot, but also chilled.
Zucchini Soup Ingredients
- Zucchini 550 g
- Rice 2 tbsp
- Milk 100 ml
- Water 500 ml
- Sour milk 100 ml
- Green onions 4 pcs
- Eggs 1 pcs
- Butter 50 g
- Wheat flour 1 tbsp
- Citric acid 1 pinch
Zucchini Soup Recipe

For zucchini soup chop the onion and fry with finely chopped zucchini in butter. Mix water with milk and pour over fried zucchini, salt and bring to a boil.

After boiling, pour in the washed rice and cook for 20 minutes over medium heat. Pass the flour, mix the sour milk with the egg, and, stirring, add everything to the soup.

Pour in citric acid, ground black pepper and mix. When serving zucchini soup, sprinkle with finely chopped herbs.
