For the vegetarian chickpea soup, rinse the chickpeas and cover with water the day before cooking. The next day, drain the water, pour the chickpeas with 1.5 liters of fresh water, bring to a boil, reduce the fire and cook the chickpeas for 35-40 minutes.
Peel the carrots, wash and cut into cubes the size of chickpeas. In a frying pan, heat 3 tbsp. olive oil, add finely chopped onions, carrots and fry for 3-4 minutes. Add fried vegetables to the pot with chickpeas, salt, pepper and simmer for another 7-10 minutes.
Squeeze the juice from the lemon, combine with the remaining olive oil, finely chopped cilantro and mix. Season soup with the prepared mixture when serving.
