Vegetable soup with wheat groats "Krchik" – the recipe for the first course of Armenian cuisine, the soup is cooked with sour cabbage and is a bit like borscht.

In order to prepare the Krchik soup recipe, peel the onion, finely chop and fry in oil. Put the washed and squeezed sauerkraut into the fried onion and simmer over medium heat, stirring occasionally, for 10 minutes. If the cabbage starts to burn and stick to the walls of the dishes, pour a small amount of water.

Boil peeled potatoes separately. When the potatoes are cooked, cut them into slices, add to the pot with cabbage and onions, pour in the broth that turned out after boiling the potatoes, pour in the grits and bring to a boil.

For this amount of vegetables, two liters of broth are needed. When soup boils, let it boil for another 10-15 minutes, salt, pepper, cover cover and let steep for 15 minutes. When serving, sprinkle the soup with red sweet pepper and garnish with parsley.
