Sakana no namban-zuke - fried fish trivia - a recipe for Japanese cuisine. Dishes in which the word namban is involved refer to the recipes that were borrowed by the Japanese from the first Europeans who visited Japan several centuries ago. Any small fish can be used for this recipe.

Recipe Ingredients

Fish 450 g
Carrots 1 pcs
Cucumbers 0.5 pcs
Green Onions 2 pcs
Ginger 4 cm
Rice Vinegar 5 tbsp
Soy Sauce 4 tbsp
Mirin 1 tbsp
Sake 2 tbsp

Cooking Recipe

For the Japanese sakana no namban-zuke recipe, wipe the fish dry with a paper towel, transfer to a saucepan, sprinkle with flour, cover the saucepan and shake vigorously until the fish is rolled in the flour.

Cut the carrots, cucumber and ginger into very thin layers, preferably with a grater, cut the green part of the onion into 5 cm pieces, and then cut along thin strips. Peel the chili and cut into thin rings.

In a separate bowl, mix rice vinegar, soy sauce, mirin, sake, add chili.

Put the pre-cut vegetables into the soy sauce, mix well and leave to marinate.

Heat the vegetable oil in a deep frying pan and fry the small fish in it until golden brown.

Fried small fish dry on a paper towel, and then place in the marinade and leave on hour, stirring occasionally. Serve cold fish and garnish with pickled vegetables.
