Pumpkin Puree Soup Recipe
The recipe for pumpkin puree soup is very simple. Peel the onion and chop finely. Pour vegetable oil into a saucepan and fry finely chopped onion. Saute the onion for 3-4 minutes until translucent. Peel pumpkin and potatoes and cut into small cubes.
Add the chopped vegetables to the onion, pour boiling water so that the water only covers the vegetables, salt and cook until tender. After the vegetables are completely cooked and become soft, drain the broth, and mash the vegetables into a puree.
Add hot milk to the vegetable puree, mix and put on a slow fire to warm up for 10-15 minutes. Then add salt, pepper, ginger, mix, cover and let the soup brew for 5 minutes.
Serve pumpkin soup hot with croutons.
