Potato cookies – not sweet pastries from Ukrainian cuisine recipes, such cookies can be served with tea, or even with borscht instead of donuts. Slightly salty puff pastry biscuits.

Recipe Ingredients

Potatoes 250 g
Wheat Flour 250 g
Butter 250 g
Eggs 1 pcs
Salt 1.5 tsp

Cooking Recipe

To cook the recipe for potato cookies, boil the potatoes in their skins, allow to cool slightly, but not completely, it should be warm. Peel the potatoes and rub through a sieve.

Add diced butter to the potatoes, add sifted flour, salt and quickly knead the dough. Wrap the dough with plastic wrap and put in the refrigerator for 1 hour. Do not be alarmed if the dough turns out to be sticky, after cooling it can be kneaded normally.

Roll out the rested dough on a floured board, roll it up in an envelope and put it back in the refrigerator for 1 hour.

Roll the prepared dough into a layer 1 cm thick and cut out the circles using a recess or glass.

Grease a baking sheet with oil or cover with parchment, put the cut cookies on it.

Brush with a lightly beaten egg and place in the oven.

Bake potato cookies at 200°C (390°F) 30 minutes until golden brown.
