- Pork ribs 4,5 kg
- Olive oil 4-5 tbsp
- Ground paprika 0,5 cup
- Brown sugar 1/4 cup
- Ground garlic 2 tbsp
- Ground coriander 2 tbsp
- Caraway 1 tbsp
- Dried hot peppers 1 tsp
- Ground black pepper 2 tsp
- Salt 1 tbsp
- For the sauce
- Ketchup 1 cup
- Apple cider vinegar 0,5 cup
- Brown sugar 0,5 cup
- Mustard 3 tbsp
Pork ribs in barbecue sauce recipe
The recipe for pork ribs in barbecue sauce is very simple. Wash the ribs well, dry with a paper towel and remove the pellicle from the rib side.
Spices for pickling ribs can be used immediately ground, or you can grind in a mortar or use a coffee grinder. Paprika or coriander for the marinade can be smoked. Mix all dry ingredients.
Grate the ribs well with olive or any other vegetable oil. After sprinkle and rub in the dry mixture. Pack in a plastic bag and refrigerate for 3 hours, preferably overnight.
Preheat the oven to 160 degrees, cover the baking sheet with parchment paper. Put the marinated ribs on a baking sheet, cover with foil and bake for 2 hours.
During this time, the meat on the ribs is completely cooked, because pork, unlike beef, needs to be cooked without blood. The foil will also prevent the meat from drying out.
In a bowl, mix all the ingredients for the sauce, you can do this in a saucepan, as you can make a sauce for serving from the remainder.
When the ribs are cooked, remove the foil and cover them with a brush or silicone spatula with the sauce. Increase the oven temperature to the maximum. Put the ribs in the oven, without foil, for 20 minutes.
Put the remaining sauce over medium heat and, stirring occasionally, boil to the thickness you like. Remove ribs from oven, cut in portions and serve hot with sauce. You can also spread the ribs with cooked sauce before serving.
