Piperad on a fried baguette – a Spanish recipe, piperad is a fried omelet with vegetables on a tender, crispy baguette.

For the Spanish recipe, piperade on a fried baguette, heat a frying pan, pour in 2 tbsp. vegetable oil. Finely chop the onion, add it to a frying pan with heated oil and fry over medium heat for 5 minutes, stirring occasionally. Rinse the sweet pepper, remove the stalk, seeds and finely chop. Pour the prepared pepper to the onion, then add chopped garlic, ground hot pepper and fry for another 5 minutes.
Scald the tomatoes with boiling water, remove the skin, finely chop and add to the fried onions and peppers. Salt, pepper, sprinkle with chopped basil and simmer over medium heat for 15-20 minutes. Vegetables must be stewed until the liquid has completely evaporated.
Cut the baguette in half lengthwise, and then cut each half into 3 more parts. Sprinkle the baguette with vegetable or olive oil and put in an oven preheated to 200°C (390°F) for 8-10 minutes.
Lightly beat the eggs, salt, pepper and pour into the fried vegetables. Fry the omelet, stirring occasionally, until fully cooked. Warm, crispy baguette, grease with butter, put the prepared piperad on it, garnish with a sprig of basil and serve hot.
