Pickled red cabbage – a recipe for cooking Ukrainian cuisine, such a red cabbage can be preserve up in jars, or you can cover with nylon lids and leave it stored in the cold. Pickled red cabbage is just as good as white cabbage. It is great as a side dish or simply as an appetizer.

Cooking Recipe

For a recipe for Ukrainian cuisine, red pickled cabbage, peel the cabbage from the top sheets, remove the stalk and finely chop.

Sprinkle chopped red cabbage with 20 g of salt and mash. Place the cabbage in an enamel bowl and set aside for 2 hours. During this time, the cabbage will be slightly salted and will release juice.

At the bottom of a sterilized jar, put 2-3 allspice peas, the same amount of black pepper and cloves. Tamp the cabbage into the jars, while squeezing the juice from the cabbage.

In a separate bowl, prepare the marinade from sugar, 20 g of salt and vinegar, pour the hot marinade over the cabbage.

Cover jars filled with marinade with red cabbage and sterilize 1 liter - 30 minutes, 3 liter - 45 minutes.

Sterilized jars of red pickled cabbage seal, turn over, cover with a warm blanket and allow to cool. When the jars are completely cool, transfer them to a cool storage area. Also, red pickled cabbage can be closed with nylon lids and stored in a cool place.
