Peking duck soup – a Chinese cuisine recipe, this soup is made from the bones and meat left over after Peking duck has been cooked. This soup is served after Peking duck at the end of the dinner. Often, when cutting a duck, the wings remain uncut, so they take meat from them. If it seems to you that the soup is light, it is not true, the soup is very satisfying, hence it follows that a dinner of duck in China is stretched out for a long time. If you are not ready to eat the soup immediately after the duck, then the remains of the duck can be packed in a plastic bag and put in the freezer and cook the duck soup the next day or later.

Rice Noodles 50-70 g

Cooking Recipe

For the Chinese Peking duck soup recipe, place the bones and remaining untrimmed Peking Duck in a saucepan and pour in just enough water to cover the duck. Put the pot on high heat and two hundred to boil. When the water boils, reduce heat and simmer for 20-30 minutes.

While the duck is cooking, you can prepare all the spices. Peel and lightly crush the garlic, peel the ginger and leave uncut. Finely chop the Chinese cabbage.

Remove the meat and bones, and strain the broth through a sieve with gauze. Strained broth put on medium heat, add sugar, ginger, garlic, star anise and soy sauce, cook the soup for 10 minutes.

Separately cook rice noodles. First, it must be soaked in warm water for 10 minutes, and then put on medium heat and cook for 5 minutes. Be careful not to overcook the noodles. Also, after soaking, the noodles can be steamed - so it will definitely remain whole.

Separate the meat from the bones and cut into slices or straws. Place the noodles, Chinese cabbage, duck meat in a serving bowl, pour over the strained soup, sprinkle with green onions and serve Peking duck hot to the table. A meal with Peking duck is completed with such a hot soup from it.
