Okroshka on whey is very convenient and tasty. By the way, okroshka can be prepared for the future, for several days, while it is not necessary to immediately fill the okroshka ingredients with liquid. Cooked and chopped, okroshka ingredients keep well for several days in the refrigerator, and you can mix them with whey as needed.
Okroshka on Whey Ingredients
- Whey 2 l
- Cooked sausage 0,5 kg
- Potatoes 0,5 kg
- Cucumbers 1-2 pcs
- Radish 200 g
- Eggs 3 pcs
- Mayonnaise 2 tbsp
- Citric acid 0,5 tsp
- Mustard 1 tsp
- Parsley 1-2 twigs
- Dill 1-2 twigs
- Green onions 2-3 stems
Okroshka on Whey Recipe
Wash the cucumbers, if the skin of the cucumber is hard, it can be cut off. Also, if the seeds in the cucumbers are too large, they can also be removed. Cucumbers cut into small cubes.
Wash potatoes and boil in their skins. Cool the boiled potatoes, peel and cut into small cubes. For okroshka, it is better to take potatoes that do not boil too much, it is easier to cut them later and it keeps its shape well.
Boil the eggs hard boiled, pour cold water for 10 minutes, and then peel. Eggs for okroshka can be finely chopped, or grated on a coarse grater.
You can use any greens for okroshka - green onions, parsley and dill are good. Wash the greens well, shake off the water and chop finely.
Wash the radish well and cut into small cubes. For okroshka, it is best to take dense, juicy and crispy radishes.
In a separate bowl, mix whey, mustard, mayonnaise, citric acid, salt and pepper. Mix everything well until smooth. The easiest way to mix whey for okroshka is with a whisk.
Pour chopped vegetables into the liquid for okroshka and mix. If needed, add salt and pepper. Whey okroshka is ready to serve.
