For the Pumpkin Soup recipe, peel and finely chop the onion. Wash the pumpkin, cut off the skin, remove the seeds and cut into cubes. Heat the butter in a saucepan with a thick bottom, put the chopped pumpkin and onion, put on medium heat and simmer for 12-15 minutes, until the pumpkin is soft.


Pour milk into a saucepan, stir, bring to a boil, pepper and heat for 2-3 minutes. Remove saucepan from heat, cool slightly, then transfer to a food processor and puree. Pour the puree into a saucepan, add the broth and cook over medium heat, stirring occasionally, for 10-15 minutes.


Mix sour cream with 1 tbsp. lime juice. Pour hot pumpkin puree soup into bowls, top with sour cream and lime and serve.
