Meat Soup with Aromatic Spices (Kharcho) – national dish of Georgian cuisine. The literal translation of the word "kharcho" is beef soup. The main ingredients are beef, walnuts and tklapi - dried tkemale plum puree, tklapi can be replaced with tomato paste. In different parts of Georgia, kharcho soup is prepared in different ways. In one version, the soup is prepared without nuts, but with the addition of a large amount of spices.
Meat Soup with Aromatic Spices (Kharcho) Ingredients
- Beef 1 kg
- Onion 5 pcs
- Walnut 1 cup
- Rice 1 cup
- Tomato paste 2-3 tbsp
- Hot pepper 1 pcs
- Allspice 5-6 pcs
- Bay leaf 2 pcs
- Cilantro 1 bunch
- Garlic 2-3 clove
- Khmeli Suneli 1 tsp
Meat Soup with Aromatic Spices (Kharcho) Recipe
For the kharcho soup recipe, rinse the meat and cut into pieces the size of a walnut. Pour chopped beef with water and cook over medium heat for 1.5-2 hours.
Finely chop the onion and fry in vegetable oil until golden brown. When the onion is fried, add the tomato paste and heat for 5 minutes.
Chop nuts and mix with pepper, suneli hops. Add washed rice to the broth with boiled meat. When the rice is cooked, add onion with tomato and nuts with spices, salt.
Let the kharcho soup boil for 5 minutes, put the bay leaf, remove from heat and let it brew. When serving kharcho soup, sprinkle with chopped herbs and chopped garlic.
