Cooking Recipe

To cook a recipe of Chinese cuisine mandarin pancakes, mix flour with sesame oil. If there is no sesame oil, you can use ordinary vegetable oil. Gradually pouring in hot, approximately 80-70 degrees water, knead a soft dough. Transfer the dough to a floured board and knead for another 5 minutes. Cover the dough with a damp towel and set aside for 30 minutes.

Roll the risen dough into a flagellum and divide into 10-12 pieces. Each piece needs to be rolled out thinly. Take your time and roll out the dough as thin as possible, the taste of pancakes depends on it, periodically, if necessary, add flour. Grease each rolled pancake with butter, cover with the next pancake and so on.

When all the pancakes are rolled out, heat the pan without oil. Put one pancake on a preheated pan and fry on both sides. It is not necessary to fry the tangerine pancakes until golden brown - as soon as one side is seized, you can turn it over. Such mandarin pancakes are often cooked and served with a very famous dish in China, and not only, Peking duck. Thanks to the oil that was added to the dough, mandarin pancakes do not break, they bend well, and you can safely wrap duck pieces in them.
