Mandarin pancakes – a Chinese cuisine recipe, pancakes that are interesting in cooking and they are translated like pancakes for officials. Sesame oil gives a special aroma and taste to Mandarin pancakes. But if there is no sesame oil, you can use ordinary vegetable oil. To cook a Chinese cuisine recipe Mandarin pancakes, mix flour with sesame oil. If there is no sesame oil, you can use ordinary vegetable oil. Pouring in hot, approximately 80-70°C (160-175°F) water, knead soft dough. Put the dough on a floured board and knead for another 5 minutes. Cover the dough with a damp towel and set aside for 30 minutes.
Roll up the dough into a flagellum and divide into 10-12 pieces. Each piece needs to be rolled thinly. Do not rush and roll the dough as thin as possible, the taste of pancakes depends on this, periodically, if necessary, add flour. Grease each rolled pancake with oil, cover with the next pancake and so on.
When all the pancakes are rolled out, heat the pan without oil. Spread one pancake on a preheated pan and fry on both sides. Frying Mandarin pancakes is not necessary until golden brown – as soon as one side is seized, you can turn it over. Such Mandarin pancakes are often cooked and served to a very famous dish in China, and not only – Peking duck. Thanks to the butter that was added to the dough, Mandarin pancakes do not break, they bend well, and you can safely wrap the pieces of duck in them.
