For the Mexican hot bean and cheese sandwiches recipe, you first need to cook the fried beans. Rinse the beans, cover with water and set aside to swell for 3 hours. After draining the water, rinse the beans again. Pour clean water into the beans, add onion, lard and bring to a boil. Cover the pan with the beans, reduce the heat and cook for 1.5-2 hours until the beans are soft. When the beans become soft, add celery, pepper, salt and continue to cook for another 20 minutes.
