Half chicken with French fries – a German cuisine recipe. Oddly enough, but this is street food, a kind of fast food. However, without this fast food it is impossible to imagine Oktoberefest. For a half chicken with deep-fried potatoes recipe, chop the herbs and mix with grated garlic, 3.5 tbsp paprika, honey and lemon juice. Cut the chicken lengthwise into two halves, grease with prepared marinade, wrap with foil and place in the refrigerator for 1 hour. Chicken halves can be laid out directly on a baking sheet, covered with a bag or stretch wrap and then refrigerated.

While the chicken is marinated, you can do potatoes. It should be peeled and cut into cubes with sides of 1 cm. Pour vegetable oil into a deep frying pan, at least 5 cm. When the oil warms up, add prepared potatoes and fry until white. This will take about 8 minutes. Then remove the potatoes with a slotted spoon and drain off the excess oil.

Back to chicken again. Preheat the oven to 180-200°C (355-390°F), depending on the oven. Season the chicken halves with salt on both sides, drizzle with olive oil and cover with foil. Cook the chicken for 50 minutes, then remove the foil and continue cooking for another 20 minutes.

Heat the oil and add the fried potatoes 20 minutes before the chicken has finished cooking. Fry potatoes for 5-7 minutes until golden brown. Mix the remaining paprika with salt and sprinkle with the mixture over the finished potatoes. Double frying the potatoes makes them crisp even after they have cooled slightly. Serve half chicken and fries with sauce.
