Grilled Eggplant Salad – a national dish of Turkish cuisine, which can be prepared not only on the stove, but also outdoors on charcoal or grill.
Grilled Eggplant Salad Ingredients
- Eggplants 3 kg
- Tomatoes 2-3 pcs
- Bell pepper 3 pcs
- Onion 1 pcs
- Lemon 1 pcs
- Olives 5-6 pcs
- Vegetable oil 3 tbsp
- White wine vinegar 1 tbsp
Grilled Eggplant Salad Recipe
For the grilled eggplant salad recipe, wash the eggplant and roast it whole on the grill or in the oven. Roast eggplant until lightly charred, then transfer to a saucepan, cover and let cool.
When the eggplant has cooled, remove the skin, chop finely and crush with a fork. You can grind eggplant with a blender. Add lemon juice, vegetable oil, vinegar, salt to eggplant and mix well.
In a separate bowl, mix finely chopped tomatoes, onions and peppers without seeds and partitions. Put eggplant salad into a salad bowl and garnish with a mixture of chopped vegetables and olives.
