Fire chicken in spicy sauce with cheese (cheese buldak) – a Korean cuisine recipe, this is a very spicy chicken, "Bul" – fire, and "dak" – chicken. For this recipe, it is not necessary to use chicken, you can use chicken thighs. To prevent chili peppers from being too hot, you need to remove seeds from it, and for those who do not really like hot peppers, you can reduce the amount of pepper. To cook Cheese Buldak, chop hot pepper, ginger and garlic. Wash the chicken fillet, dry it with a paper towel and cut into cubes, about 1 cm. Cut the mozzarella, too, into a cube with a side of 1 cm as well.
In a deep bowl, mix chili pepper, chili paste, garlic, ginger, soy sauce, 2 tbsp vegetable oil, ground black pepper and rice syrup.
Next, put the chicken fillet in the marinade and mix everything well so that the sauce falls on each side of the fillet.
Put chicken fillet in a cast-iron pan, and pour water into a deep bowl to collect the remaining marinade and pour it into the pan too. Cover the pan and simmer over medium heat for 10 minutes. In a conventional frying pan, this will take 7-8 minutes. After stirring, reduce heat, cover and cook the same amount or until fillet is completely cooked.
Next, put chopped mozzarella on top of the chicken and put in the oven preheated to 180°C (355°F). You can do without an oven, we do not need the cheese to brown, we need it to melt well and begin to bubble. Mozzarella melts very well under the lid, so you can reduce the fire to a minimum, cover and hold for 5-7 minutes.
When the cheese melts well, chicken fillet can be served. Before serving, you can sprinkle with finely chopped green onions.
