Cheesecake New York – recipe for the famous delicate Philadelphia cheese dessert, this dessert is impossible to resist. Cheese can be used not only Philadelphia, any cream cheese absolutely will not spoil this wonderful cake. Of course, you can replace cream cheese with cottage cheese or ricotta, the cake will be delicious, but it will have nothing to do with this cheesecake. You can decorate the cheesecake with various fruits and berries if you wish.

Cooking Recipe

For the recipe for American cuisine cheesecake New York, you first need to cook the base (cake). Finely crumble the cookies, this can be done with a food processor or placed in a plastic bag and beaten with a hammer or rolling pin. Mix cookie crumbs with 50 g of sugar and melted butter and mix everything well.

Grease a 23 cm detachable form with butter, put a mixture of crumbs on the bottom and along the walls of the form and press down well. This will be the base or cake. Cover the form with the base with a film and put in the refrigerator.

Put the Philadelphia cheese into a food processor and, beating at medium speed, add sugar (200 g), flour and beat until smooth. Then add one egg, lemon zest, vanilla sugar (1 tsp) and cream. Mix everything well, periodically scraping off the sides with a spatula.

Remove the form with the base from the refrigerator, pour in the cheese mass and place in the oven preheated to 180°С (355°F). Bake for 15 minutes, and then reduce the temperature to 120-140°C (250-285°F) and bake for 1.5 hours. At the end of baking, the center of the cheesecake should be slightly damp and firm towards the sides.

When cooling, the cheesecake will sink and cracks and tears may appear, to prevent this from happening, it is necessary to run a knife around the circumference of the cheesecake, separating it from the walls of the mold.

While the cheesecake is cooling and sinking, combine the sour cream, remaining sugar and vanilla sugar in a bowl. Pour the whipped sour cream over the cheesecake, smooth and place in the oven preheated to 120-140°C (250-285°F) for 15 minutes. After the time has elapsed, remove the dessert from the oven and, without removing it from the mold, let it cool, and then, also in the mold, place it in the refrigerator for 8 hours. When the cheesecake has settled, take it out of the detachable form, you can decorate with fresh berries or pour over with berry sauce when serving.
