For Bohemian eggplant recipe, finely chop the onion and garlic. Cut the peel from the tomatoes, remove the seeds and liquid and chop finely.
Cut off the peel from the eggplant and cut into slices, not thin, about 1.5 cm. Pour olive oil into the pan, not all at once, adding a little while frying.
