Black Forest cherry cake – recipe for German cuisine, airy, delicate and very tasty cake with cherry liqueur. Cherries for the cake can be taken canned, from jam or frozen, but cocktail cherries look best.

For Schwarzwald cherry cake according to the recipe of German cuisine, cool the whites and beat them into a stiff foam with half the powdered sugar. Break milk chocolate, melt in a water bath. Pour half a glass of water into the chocolate, mix until smooth. Pour the melted chocolate into the sifted flour, carefully fold in the beaten egg whites.
Spread the baking dish with vegetable oil and lay out the dough. Bake the cake in an oven preheated to 180°С (355°F) for 20-25 minutes. Allow the baked cake to cool, remove from the mold and cut lengthwise into three parts.
Soak gelatin in half a glass of water for 30-40 minutes. Pour the remaining powdered sugar into the chilled sour cream and beat, add the liqueur, gelatin, the rest of the sour cream and mix well.
Put a layer of cherries on the bottom cake, cover with a layer of sour cream on top. Cover the cream with a cake, put a layer of cherries on top again, cover with a layer of cream and cover with the top cake.
Cover the top and sides of cake with sour cream, decorate with pre-set cherries and grated dark chocolate. Put the cooked Black Forest cake in the cold for 2-4 hours, and then cut and serve.
