Beef Kidney Soup – English cuisine recipe, the soup is very simple, but tasty and satisfying. In England, kidney soup is served with salted biscuits or puff pastry pies with savory fillings.

- Beef kidneys 4 pcs
- Onion 1 pcs
- Lemon 1 pcs
- Parsley 1 bunch
- Wheat flour 4 tbsp
- Butter 3 tbsp
- Hot pepper 1 pcs

Beef Kidney Soup Recipe
For the kidney soup, cut the kidneys in half lengthwise, cut out the ureters and rinse well. Soak the washed kidneys in cold water with a small amount of vinegar for 4-5 hours, while changing the water several times. After the kidneys are soaked, rinse well, dry, cut into small slices of medium thickness and dredge in 2 tbsp. flour.
Heat half the butter in a heavy-bottomed saucepan, put the kidneys in the saucepan and fry until golden brown. When the kidneys are fried, pour in 1.5 liters of boiling water, cover and cook over medium heat until the kidneys are tender, about 1 hour. Add salt at the end of cooking.
Finely chop the onion and fry in the remaining oil. Separately, in a dry frying pan, lightly fry the remaining flour. Add the fried flour and onion to the pan with the kidneys, mix well and bring to a boil. After the soup boils, remove it from the heat and let it brew under the lid for a few minutes.
Wash the lemon and cut off 8 thin circles, squeeze the juice from the rest of the lemon and add to the soup. Pour the soup into bowls, put a slice of lemon, sprinkle with chopped parsley and finely chopped hot pepper. Serve kidney soup hot.
