Wasabi - the plant is known as "Japanese horseradish", but in reality it is not horseradish, although it is related to it (both genera belong to the same family). The seasoning made from its rhizome is also called wasabi and is widely used in Japanese cuisine. Because wasabi is difficult to grow, this expensive product outside of Japan is typically replaced by a mixture of horseradish (sometimes called "western wasabi" by the Japanese), mustard, and green food coloring. Also, dry or powdered wasabi is often sold in stores, which can be diluted with boiling water.
