Soya pasta is an Asian fermented meal made from fermented soybeans. In addition to soybeans, other beans, such as garden beans, may be included. The paste contains monosodium glutamate and has a salty and umami taste, but some types of pasta are spicy. Soya paste is used to season meat, vegetables, soups and other dishes. Color varies from light brown to dark red-brown. Differences in color reflect different cooking methods, fermentation conditions, the possible addition of flour, rice or sugar, and also affects whether the beans have been pre-processed.
