Soy

Soy – recipe ingredient

Soy or soybeans are a type of legume native to East Asia, widely grown for their edible beans, which have numerous uses. Traditional unfermented soybean foods include soy milk, which is used to make tofu. Fermented soy foods include soy sauce, bean paste, nut, and tempeh. Soy flour is a significant and cheap source of protein from which soy products are prepared, such as textured vegetable protein (TVP), an ingredient in many meat and dairy substitutes. Soybeans contain significant amounts of phytic acid, dietary minerals and B vitamins. Soybean oil, used for food and industrial purposes, is another processed soybean product.
