Oat flakes - oatmeal flattened with a special apparatus in the form of corrugated or smooth petals. Used for instant oatmeal or as a base for other quick breakfasts such as granola and muesli. To obtain flakes, whole oat grains are dried, cleaned from chaff, polished and steamed. Under the influence of steam, the grains become softer, which significantly reduces the time for their subsequent cooking in food. Rolling serves the same purpose, increasing the specific surface of the product. At the final stage, the flakes are often heat treated.
