Nitrite Salt is a preservative used in the meat processing industry for salting meat and fish products. It is a mixture of table salt with a small amount of sodium nitrite. As a food additive it is used in the food industry for two purposes: as an antioxidant and as an antibacterial agent that prevents the growth of Clostridium botulinum, the causative agent of botulism, a severe food intoxication caused by botulinum toxin and characterized by damage to the nervous system.
