Merluza (lat. Merluccius), is a genus of fish from the monotypic family of merluza. The genus includes 16 species. The merluza is widespread on the continental shelf of the Atlantic and Pacific oceans, at depths from 100 to 1000 m. In general, merluza is sold frozen, since fresh fish fast loses its taste and aroma. The meat is tender, white, it has few bones, the boiled fillet is easily separated from the skeleton.
