Garam masala (garam ("hot") and masala ("blend")) are a mixture of spices used in North Indian cuisine and in the cuisine of several other South Asian countries. It is used both alone and in combination with other spices. The word "garam" means "warming the body", since the spices in the mixture are considered in Ayurvedic medicine to increase the temperature of the human body. The composition of garam masala differs depending on the region. Various combinations of these and other spices are used in different recipes, and neither recipe is considered more reliable than the other. The components of the mixture are fried and mixed.
