Agar-agar is a vegetable substitute for gelatin. Agar is obtained by extraction from red algae (Phyllophora, Gracilaria, Gelidium, Ceramium, etc.) growing in the Black Sea, White Sea and Pacific Ocean, and forming a dense jelly in aqueous solutions.
