Citrus – generalizing the name of fruits of such species as lemon, orange or mandarin. In cooking, not only the internal contents of citrus fruits are used, but also the zest - the top layer of the skin covering citrus fruits. In some recipes, the use of a particular citrus variety is critical, and in some dishes any citrus fruit or zest can be used.
